Harvest: manual in small boxes in the first half of October.

Vinification: the grapes are destemmed and subjected to a short cold skin maceration. The fermentation, after soft pressing, proceeds slowly, at a controlled temperature of 18°C.

DESCRIPTION OF THE WINE:

Produced with Nebbiolo grapes

  • Color: the color is pink, the reflections tend towards pale purple.
  • Bouquet: the intensity and aromatic complexity of this wine are notable. The aromas of the "sanateur" candies stand out, licorice gummies flavored with violet, and fruit pulp jellies, strawberries and wild cherries.
  • Taste: confirms the sensations perceived by smell, interesting, fresh, balanced between alcohol and acidity, pleasant aromatic persistence in the aftertaste.
  • Food pairings: accompanies aperitifs, starters, fish and white meats.
  • Serving temperature: served chilled 11-12°C
